  • 3 chicken breasts
  • 1 small onion (chopped)
  • 2 cups chicken broth
  • Salt and pepper (to taste)
  • 1 TBSP butter
  • 1 TSP garlic powder
  • 1 TSP cumin
  • 1 TSP chili powder
  • 1 TSP smoked paprika powder
  • 1 TSP chili flakes
  • 1 or 2 bay leaves
  • 1 TSP marjoram
  • 1 TSP oregano
  • 1 can diced tomatoes
  • 2 oz tomato paste
  • Cilantro (garnish, optional)
  • Grated cheese of choice (garnish, optional)

Instructions:

  1. Place the breasts in a skillet, cover them with water or broth (just barely)
  2. Bring the broth to a boil and cook the breasts until they are no longer pink
  3. Remove from skillet and shred with a fork

  5. Once it’s melted, add onions and cook until soft and translucent
  6. Add the chicken, tomato paste, garlic, chili, smoked paprika, cumin, and bay leaf; stir well
  7. Add the broth and diced tomatoes
